A choma bay is not a fast food counter and it is not fine dining. You buy meat by the kilo, cook it slowly, serve big groups who arrive together and pay separately, and do most of your business across a weekend.

Orderly tracks meat stock by weight so you can see the yield you actually got, times the kitchen screen so long-cook items start early and land together, and splits bills by person or item with every M-Pesa payment reconciling itself - however many people paid.
