Great food and glowing reviews are not enough if you have no way to reach the people who ate it. How to build a customer list you own.
A restaurant owner described their situation like this: 4.9 stars on Google, glowing reviews, customers raving on the way out the door - and barely enough sales to stay open. The line that stuck was "people rave about us while they are dining, yet those people rarely, if ever, return."
Nothing was wrong with the food or the service. The problem was that every one of those delighted customers walked out as a stranger.
The missing asset
Most restaurants have no way to contact anyone who has eaten there. No names, no numbers, no order history. So every day starts from zero, hoping enough people walk past.
Meanwhile delivery apps have all of it. When someone orders through a platform, the platform captures the name, phone number, address and order history. You get the ticket; they get the customer. Which is why you end up paying commission on repeat orders from people who already knew your name.
Five ways to start owning the relationship
1. Take orders on your own site
The single biggest change. Every direct order gives you a name and a number, and costs no commission. You do not have to leave the apps - use them for discovery, and move regulars to your own channel.
2. Make the WhatsApp connection
Almost everyone in Kenya uses WhatsApp daily. A customer who orders through WhatsApp once is a customer you can message again - about a special, a new dish, a quiet Tuesday.
3. Use QR ordering to capture, not just to serve
QR table ordering is usually sold on speed. The quieter benefit is that dine-in customers - normally completely anonymous - become known.
4. Ask for the review while they are still delighted
Reviews are the second-best asset after a customer list. The moment to ask is when someone is telling you how good the meal was, not by email three days later.
5. Put your social videos where they can be acted on
A video doing well on TikTok is worth very little if the trail ends at a dead bio link. Point it at your menu with an order button and the same video starts producing orders.
What to do with the list
Do not overcomplicate it. A message to your regulars when you have a genuinely good reason - a new dish, an event, a slow week - outperforms almost any advertising a small restaurant can buy. The people on that list have already decided they like you. You are only reminding them you exist.
The uncomfortable maths
If a hundred delighted customers leave every week and you cannot contact any of them, that is five thousand people a year who liked your food and had no reason to think of you again. Fixing that is usually cheaper and faster than finding new customers.
